Carcase Hygiene Inspection Training Resources

In this project, AMPC has funded the development of an e-learning program to improve the ability of industry staff to identify physical contamination on carcases. In recent years 'port of entry' red meat inspection has become more stringent and there have been an increased number of "rejections" associated with physical contamination on both carcases and carton meat.

As part of the industry's response. It was decided to review the resources available to processors for training of staff in the identification of physical contamination of carases. As a consequence of the review undertaken. AMPC funded this project to upgrade the existing resources used to train trimmers and Meat Hygiene Assessment (MHA) carcase monitors.
